  • 3 cups cocoa powder (unsweetened)
  • 6 cups sugar
  • 6 cups light corn syrup (Karo)
  • 3 cups heavy cream
  • 1/2 teaspoon salt
  • 1 Tablespoon vanilla extract
  • 18 Tablespoons butter


  1. Sterilize jars by boiling in a pot of water or in the dishwasher.
  2. Mix cocoa and sugar together, breaking up any lumps.
  3. Melt butter in large pot.
  4. Add in sugar/cocoa mixture, syrup and cream. Stir together
  5. Bring to a low boil and reduce heat to low, stirring occassionally to break up any lumps, and thickening for about 10 minutes. Watch carefully to not overboil, or the sauce will harden.
  6. Cool for 10 minutes and then mix in vanilla.
  7. Ladle into  jars and close with tops to seal.


Each batch makes 10 12 ounce jars or 15  8 ounce jars.

Refrigerate after opening.
