  • 1/2 cup avocado, pitted, peeled, roughly mashed
  • 1/2 cup ricotta cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon lemon juice
  • 4 slices Italian bread, toasted
  • 1/4 cup radish, thinly sliced
  • 2 cups mixed baby greens
  • 1 lemon, cut into wedges
  • 4 eggs, poached


  1. Mix the mashed avocado, ricotta cheese, garlic powder, salt, pepper and lemon juice in a medium bowl.
  2. Spread some of the avocado mixture evenly on each slice of toast.
  3. Top with the sliced radishes, spring mix, a squeeze from a lemon wedge, and a poached egg over each toast.
