  • 1 Tablespoon olive oil
  • 20 ounces frozen spinach, thawed
  • 1/2 yellow onion, chopped
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 2 cloves fresh garlic, crushed
  • 32 ounces spaghetti sauce (marinara)
  • 1 1/2 cups water
  • 2 cups nonfat cottage cheese
  • 2 cups shredded part-skim mozzarella cheese, reserving a bit for top
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup fresh Italian (flat-leaf) parsley
  • 1 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 1 egg
  • 8 lasagna noodles


  1. Preheat oven to 350 ┬░F.
  2. Saute spinach, onion, oregano, basil and garlic in olive oil over medium heat.
  3. Reserve about a half cup of sauce. Pour the remaining spaghetti sauce and the water into the spinach mixture; simmer 20 minutes.
  4. Mix cottage cheese, mozzarella cheese, Parmesan cheese, parsley, salt, pepper and egg in a bowl.
  5. Spoon enough of the plain sauce into the bottom of 9x13 pan to barely cover.
  6. Line up 4 uncooked noodles on top of sauce.
  7. Top with half of the spinach mixture and half of the cheese mixture. Repeat with remaining noodles, spinach spaghetti sauce and cheese.
  8. Top with remaining plain sauce and extra mozzeralla.
  9. Cover with foil and bake in a preheated oven for 55 minutes.
  10. Remove foil and bake another 15 minutes.
  11. Allow to sit for 10 minutes before serving.
