Cheesy Bacon and Egg Brunch Casserole

  • 8 slices bacon
  • 1 chopped onion
  • 1 loaf Italian bread, cut into 1-inch cubes
  • 2 cups shredded Cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup cottage cheese
  • 5 eggs
  • 1 1/2 cups lowfat milk
  • 2 teaspoons dried ground mustard
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon ground black pepper


  1. Preheat oven to 350 °F.
  2. Cook the bacon in a large skillet until crisp. Drain on paper towels, crumble and set aside.
  3. Remove all but 2 tablespoons drippings from the skillet. Add the onion to the skillet. Cook and and stir 3 minutes or until softened.
  4. Spread half of the bread cubes in a baking dish. Layer with half each of the onion, bacon, Cheddar cheese and mozzarella cheese. Spread evenly with the cottage cheese. Top with remaining bread cubes, onion, bacon, Cheddar cheese and mozzarella cheese.
  5. Beat the eggs in a medium bowl with a wire whisk.
  6. Add the milk, mustard, nutmeg and pepper, then mix well.
  7. Gradually pour the mixture into the baking dish. Press the bread cubes lightly into egg mixture until completely covered. Let stand 10 minutes.
  8. Bake 40 to 50 minutes or until center is set and top is golden brown.


Serve with a fruit salad, if desired.
