Ingredients

  • 1/2 cup mayonnaise
  • 1/2 cup whole milk
  • 4 eggs, beaten
  • 8 ounces shredded reduced-fat Cheddar cheese
  • 10 ounces frozen spinach, thawed and squeezed dry
  • 1/4 cup yellow onion
  • 1 pie crust

Preparation

  1. Preheat oven to 400 ┬░F.
  2. Line a baking sheet with foil.
  3. Whisk together mayonnaise and milk until smooth. Whisk in eggs.
  4. Layer spinach, cheese, and onion in pie shell.
  5. Pour egg mixture over the vegetables and cheese.
  6. Place quiche on baking sheet and cover with foil.
  7. Bake in preheated oven for 45 minutes.
  8. Remove foil and bake 10 minutes, or until filling is firm and top a golden brown.
