  • 3/4 pound hot Italian sausage, If sausage links, remove casing
  • 4 green bell peppers
  • 2 cups cauliflower rice, prepared according to package directions
  • 1 cup tomato paste
  • 1 cup chopped onion
  • 1 teaspoon minced garlic
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme leaves


  1. Cut the tops off of the bell peppers, discard the seeds, and save the tops.
  2. Place the cauliflower rice in a large bowl.
  3. Add the minced garlic, basil, oregano, thyme and onion to the cauliflower and stir to combine.
  4. If you choose, lightly brown the sausage in a very hot skillet. (The sausage will cook just fine in a slow cooker, but if you decide to sear it a little it will take the flavor up a notch.)
  5. Add the sausage and tomato paste to the bowl of seasoned cauliflower, and stir to combine. 
  6. Fit as much of the sausage mixture into the peppers as you can.
  7. Place the stuffed peppers into a slow cooker, and loosely place the pepper tops back on. If you have extra meat and cauliflower mixture, place it in the slow cooker alongside the peppers.
  8. Cook on low for 6 hours.
