  • 1/4 cup olive oil, divided
  • 1 Tablespoon minced garlic
  • 1/2 teaspoon crushed red pepper flakes
  • 2 quarts water
  • 1 Tablespoon kosher salt
  • 8 ounces fettuccine pasta
  • 1/2 cup grated Parmesan cheese (optional)
  • 1/3 cup chopped fresh Italian (flat-leaf) parsley


  1. Heat a large skillet over medium heat. Add 1/2 of the oil; swirl to coat. Add the garlic; cook 30 seconds, stirring constantly. Stir in the pepper. Remove from heat.
  2. In a large pot, bring water to a boil, add salt to boiling water.
  3. Add the pasta; cook 8 minutes or until almost al dente.
  4. Drain pasta in a colander over a bowl, reserving a small portion of the cooking liquid.
  5. Add the hot pasta, reserved cooking liquid and cheese, if desired, to the garlic mixture.
  6. Increase heat to medium-high; cook 2 minutes or until pasta is al dente, tossing to combine. Remove from heat.
  7. Add the parsley; toss. Place pasta on each plate; drizzle each serving with remaining olive oil.
