  • 2 Tablespoons lemon juice
  • 2 Tablespoons olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground black pepper
  • 2 1/2 cups Hass avocado, cubed
  • 6 tomatoes, cut into wedges
  • 1 1/4 cups chopped English cucumber
  • 2 Tablespoons chopped fresh dill
  • 2 Tablespoons chopped fresh parsley


  1. For the dressing, in a small bowl, whisk together the lemon juice, olive oil, garlic powder and black pepper.
  2. In a large bowl, combine the avocado, tomatoes, cucumber, fresh dill and fresh parsley.
  3. Pour the dressing over the salad, and toss to coat.
  4. Serve immediately.
