For a taste of the islands, try these exciting kabobs featuring flavorful Caribbean jerk seasoning.

2cupssweet potato, cut into 1-inch cubes
1/4cupfresh orange juice
3TablespoonsCaribbean jerk seasoning
1poundboneless sirloin steak, cut into 1-inch cubes
2cupsred bell pepper, cut into-inch pieces
4cupszucchini, cut into 1-inch cubes
Place the sweet potatoes in a saucepan. Cover with water. Bring to a boil. Reduce heat to low; simmer 8 to 10 minutes or until potatoes are tender. Drain and cool.
Mix the oil, orange juice, seasoning and cumin in a small bowl. Place the meat in a large resealable plastic bag or glass dish. Add 1/2 of the marinade; turn to coat. Refrigerate 30 minutes or longer for extra flavor.
Place sweet potato, bell pepper, zucchini and shallots in a second plastic bag. Add remaining marinade; turn to coat. Refrigerate 30 minutes or longer for extra flavor.
Remove meat and vegetables from marinade. Discard any remaining marinade. Thread meat and vegetable cubes alternately onto skewers.
Broil or grill over medium-high heat 10 to 12 minutes or until beef is desired doneness, turning occasionally.
