  • 2 avocados, halved and pitted
  • 4 eggs, large
  • 1/4 teaspoon ground black pepper
  • 1 Tablespoon sriracha hot chili sauce
  • 1 Tablespoon chopped fresh cilantro


  1. Preheat the oven to 425 °F. Line a baking pan with foil.
  2. Scoop out some of the pulp from the avocado halves, leaving a hole big enough to fit an egg (reserve pulp for another use).  
  3. Place avocado halves in the prepared pan to fit snugly in a single layer. Fold foil around avocado halves to prevent tipping.   
  4. Crack an egg into each avocado half, and season with pepper.
  5. Bake for 12 to 15 minutes or until whites are set and eggs are cooked to desired doneness.
  6. Let stand for 5 minutes before serving. 
  7. Drizzle each egg with hot sauce, and sprinkle cilantro over top.
