  • 1 cup red bell pepper, chopped into large pieces
  • 1/2 chopped onion, chopped into large pieces
  • 1 zucchini, chopped into large pieces
  • 1 cup fresh broccoli, chopped into large pieces
  • 10 ounces boneless skinless chicken breast, chopped
  • 1/2 cup halved cherry or grape tomatoes
  • 2 Tablespoons olive oil
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1 teaspoon Italian Seasoning
  • 1/4 teaspoon paprika (optional)


  1. Preheat the oven to 500 ┬░F. 
  2. Place the chicken and chopped veggies in a roasting dish or sheet pan. Add the olive oil, salt and pepper, Italian seasoning and paprika. Toss to combine.
  3. Bake for 15 minutes or until the veggies are charred and chicken is cooked.
