  • 1 teaspoon dried oregano
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon ground black pepper
  • 2 pounds boneless skinless chicken breast
  • 2 Tablespoons unsalted butter
  • 1/2 cup reduced-sodium chicken broth or stock
  • 3 Tablespoons fresh lemon juice
  • 2 teaspoons minced garlic
  • 1 Tablespoon chopped fresh parsley


  1. In a small bowl, combine the oregano, garlic, seasoned salt and black pepper.
  2. Mix well, and rub the chicken breasts with oregano mixture.
  3. Heat the butter in a large nonstick skillet. Brown the seasoned chicken breast halves in the hot butter.
  4. Using a slotted spoon, transfer chicken to a slow cooker.
  5. Pour the stock and lemon juice in the same skillet. Bring to a boil over high heat, loosening browned bits from skillet.
  6. Pour the boiled lemon mixture over the chicken in the slow cooker.
  7. Cover and cook on low-heat setting for about 4 hours.
  8. Add parsley, and baste the chicken.
  9. Cover slow cooker, and cook on high-heat setting for a further 15 to 30 minutes, or until chicken breasts are tender.
