  • 3 cups cauliflower rice
  • 2 Tablespoons vegetable or canola oil
  • 1 cup finely chopped onion
  • 3 teaspoons minced garlic
  • 2 cups carrot, diced
  • 3 cups snow peas
  • 1/4 cup soy sauce or tamari
  • 1/2 cup chopped green onion (scallion)
  • 1/3 cup cashews


  1. Heat the oil in a large wok over medium-high heat. Add the onion, and cook until softened, about 5 minutes.
  2. Add the garlic, and cook another minute.
  3. Raise heat to high.
  4. Add the cauliflower, carrots, snow peas and soy sauce. Cook, flipping frequently until veggies become tender-crisp, and cauliflower begins to brown in spots, about 5 minutes.
  5. Divide among plates and top with scallions and cashews.
