  • 12 low fat vanilla wafers
  • 1/4 ounce unflavoed gelatin
  • 1/4 cup water, cold
  • 1 cup nonfat milk (skim)
  • 1/3 cup sugar
  • 1/3 cup cocoa powder (unsweetened), unsweetened
  • 1 teaspoon vanilla extract
  • 1 3/4 cups Sugar-Free Whipped Topping, thawed if frozen
  • 1 cup fresh raspberries


  1. Line a 12-hole muffin tin with foil muffin liners. Place 1 cookie on the bottom of each hole.
  2. Sprinkle the gelatin over the cold water in a small saucepan, and let stand 1 minute. Stir over low heat until dissolved, about 5 minutes.
  3. Combine the milk, sugar, cocoa and vanilla extract in a blender. Process until blended, adding the dissolved gelatin through the feed cap during blending.
  4. Pour into a medium bowl, then whisk in the whipped topping.
  5. Pour the mousse into the prepared muffin tin.
  6. Chill until firm, about 3 hours.
  7. Peel away the foil liners, and place the tarts on serving plates.
  8. Garnish with raspberries.
