Turkey Avocado Lettuce "Tacos"

  • 1 Tablespoon olive oil
  • 1 cup yellow onion, chopped
  • 1 pound ground turkey (7% fat)
  • 1 Tablespoon chili powder
  • 1 teaspoon ground cumin
  • 2 Tablespoons tomato paste
  • 1/2 cup water
  • 1 Hass avocado, ripe, halved, pitted and diced
  • 1 Tablespoon lime juice
  • 1 cup tomato, chopped
  • 1/2 cup red onion, diced
  • 1/2 cup chopped fresh cilantro
  • 1 Tablespoon minced jalapeno pepper, seeds removed
  • 12 leaves Bibb or butterhead lettuce, washed and trimmed


  1. Heat the oil over medium heat in nonstick pan. Add the yellow onion, chili powder and cumin.
  2. Cook, stirring occasionally, until soft. Add the turkey and cook, stirring occasionally until cooked through.
  3. Add the tomato paste and water, and simmer until the liquid evaporates. Remove from heat.
  4. Combine the tomato, avocado, lime juice, red onion, cilantro and jalapeno in a small bowl. 
  5. Fill the lettuce leaves with the warm turkey mixture and avocado salsa. Each serving is three "tacos".
