Ingredients

  • 1 1/2 pounds salmon fillet, cut into serving size pieces
  • 2/3 cup Thai style sweet chili sauce
  • 3 Tablespoons chopped green onion (scallion) (optional)
  • 2 sprays cooking spray

Preparation

  1. Turn on your oven's broiler to high and position the top oven rack 5 to  6 inches below the heat source.
  2. Line a large baking sheet with unbleached parchment paper or foil. Spray with cooking spray and place the salmon fillets skin-side (if any) down. Using a brush or the back of a spoon, spread a tablespoon of Thai sweet chili sauce on each portion.
  3. Broil for 8 minutes, rotating the baking sheet once.
  4. Remove from the oven and brush the top of each fillet with another tablespoon of the Thai sweet chili sauce.
  5. Return to the oven and broil for another 5 minutes, or until the salmon has caramelized.
  6. Serve hot, garnished with green onions.

Tips

For extra flavor, before cooking, you can let the salmon marinate with the sauce in the refrigerator for a couple of hours or overnight.
