  • 8 6-inch flour tortillas
  • 2 Tablespoons vegetable or canola oil
  • 1 cup red onion, thinly sliced
  • 1 cup green bell pepper, seeded and thinly sliced into strips
  • 1 cup red bell pepper, seeded and thinly sliced into strips
  • 1 teaspoon fresh garlic, minced
  • 1 cup yellow squash, halved and sliced into strips
  • 1/2 cup salsa
  • 1 teaspoon ground cumin
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup chopped fresh cilantro, chopped fresh (optional)


  1. Bake tortillas wrapped in aluminum foil, at 350 °F (175 °C) for 15 minutes.
  2. While the tortillas are heating, sauté onions, red and green peppers, and garlic in oil.
  3. Cover, reduce heat to medium, and cook for 5 minutes.
  4. Stir in squash, salsa, and cumin. Cover, and cook for 5 minutes.
  5. Spread vegetable mixture evenly down the centers of tortillas, and sprinkle with cheese and cilantro.
  6. Roll tortillas, and serve.
