  • 1 Tablespoon butter
  • 2 cups zucchini, cubed
  • 1 pinch crushed red pepper flakes
  • 1 cup spaghetti sauce (marinara)
  • 1 1/2 cups shredded mozzarella cheese
  • 4 submarine or hoagie rolls
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 cup fresh broccoli
  • 1/2 teaspoon dried oregano
  • 1/4 cup chopped onion
  • 1/4 teaspoon garlic powder


  1. Preheat the oven to 350 °F (175 °C).
  2. Melt butter over medium heat and sauté onion and zucchini until browned. Add broccili florets and saute until slightly tender.
  3. Season with red pepper flakes, garlic, oregano, salt and black pepper, stir in the marinara sauce and stir until heated.
  4. Spoon mixture into sandwich rolls and top with shredded mozzarella.
  5. Wrap individually in aluminum foil.
  6. Bake for 15 minutes and serve.
