Ingredients

  • 2 10.5 oz cans/jars Campbell's Healthy Request Condensed Cream of Chicken Soup
  • 1 cup white wine
  • 1/4 cup pitted and chopped Kalamata olives
  • 2 Tablespoons capers, drained
  • 2 cloves fresh garlic, minced
  • 14 ounces canned artichoke hearts, drained and chopped
  • 1 cup sun-dried tomatoes, drained and coarsely chopped
  • 2 pounds boneless skinless chicken breast, cut into serving size pieces
  • 1/2 cup fresh basil , chopped (optional)
  • 2 cups brown rice

Preparation

  1. Cook rice according to package directions.
  2. Stir the soup, wine, olives, capers, garlic, artichokes and tomatoes in a slow cooker. Add the chicken and turn to coat.
  3. Cover and cook on low for 7 to 8 hours or until the chicken is cooked through. 
  4. Sprinkle with the basil.
  5. Serve with the cooked rice.
