Ingredients

  • 12 ounces white firm fish (e.g. cod, pollack, catfish, haddock, bass), cut into serving size pieces
  • 1 pound asparagus, woody ends cut off
  • 1/4 cup sliced green onion (scallion)
  • 2 Tablespoons chopped fresh basil
  • 1 teaspoon minced garlic
  • 1 1/2 teaspoons fresh ginger, sliced or minced
  • 2 Tablespoons soy sauce or tamari
  • 2 teaspoons olive oil
  • 2 dashes ground black pepper
  • 2 square feet parchment paper

Preparation

  1. Preheat the oven to 425 ┬░F. Cut parchment paper into 1 foot square(s) and lay out on a baking sheet.
  2. Set individual fish serving onto the center of piece of parchment paper.
  3. Top the fish with the asparagus, then the onions. Add the basil, garlic, ginger, soy sauce, olive oil and black pepper.
  4. Close up the parchment paper to make little package(s).
  5. Bake in the oven for 15 minutes or until fish is cooked through and asparagus is tender (but not overcooked).
