  • 4 ounces rotini pasta
  • 2 Tablespoons olive oil
  • 1 cup red, yellow or orange bell pepper, chopped
  • 1 cup cucumber, chopped
  • 2 teaspoons Italian Seasoning, to taste
  • 1/4 cup canned sliced black olives
  • 1 cup canned artichoke hearts, drained
  • 2 Tablespoons lemon juice
  • 1 pinch salt
  • 1/4 cup chopped fresh Italian (flat-leaf) parsley (optional)


  1. Cook pasta according to package directions.
  2. Meanwhile, heat oil in a pan, add peppers, onion and Italian seasoning.
  3. Cook over medium-high heat, stirring occasionally, until peppers are just tender (6-8 minutes). Remove from heat.
  4. Combine the drained pasta, the pepper mixture, and the rest of the ingredients and toss gently.
  5. Cover and refrigerate 2 hours to allow the flavors to blend before enjoying.
