Ingredients

  • 3 slices bacon
  • 3/4 cup yellow onion
  • 3 cups reduced-sodium chicken broth or stock
  • 3 cups water
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 1/2 pounds dried black-eyed peas
  • 1 1/2 pounds frozen turnip greens, thawed
    1 1/2 pounds collard greens
  • 3 tablespoons red wine vinegar

Preparation

  1. Cook the bacon in a Dutch oven over medium heat until crisp. Remove bacon from the pan using tongs or a slotted spoon, reserving drippings in the pan. Crumble the bacon.
  2. Add the onion to drippings in the pan; sauté 4 minutes, stirring occasionally. Stir in the broth, water, salt, pepper, turnip greens and black-eyed peas; bring to a boil.
  3. Reduce heat, and simmer for 55 minutes or until peas are tender, stirring occasionally and skimming as necessary.
  4. Stir in the vinegar. Ladle the pea mixture into serving bowl; top with crumbled bacon.
