  • 1 cup frozen corn, thawed
  • 1 cup jicama (yam bean), peeled and chopped
  • 1/2 cup red onion, peeled and diced
  • 1/2 cup red bell pepper, seeded and diced
  • 1 cup chopped fresh cilantro
  • 2 Tablespoons lime juice


  1. Peel jicama and chop into approximately 1/2 inch pieces.
  2. Dice red onion and bell pepper.
  3. Finely chop cilantro.
  4. Mix together corn, red onion, bell pepper, jicama, and cilantro.
  5. Stir in lime juice and zest. Serve at room temperature or cold.
