Chicken with Rosemary, Red Bell Peppers and Olives

  • 1 1/2 pounds boneless skinless chicken breast
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 1 Tablespoon olive oil
  • 1/4 cup pancetta, coarsely chopped
  • 2 red bell peppers, cut into short, thin strips
  • 1/2 cup shallot, thinly sliced
  • 2 Tablespoons lemon zest, grated
  • 2 teaspoons garlic powder
  • 2 teaspoons crushed rosemary
  • 1/2 cup white wine
  • 1 cup reduced-sodium chicken broth or stock
  • 4 teaspoons all-purpose flour
  • 1/2 cup pitted green olives, quartered


  1. Season the chicken with sea salt and pepper.
  2. Heat the oil in a large skillet on medium-high heat. Add chicken, then cook 5 minutes, or until browned, turning once.
  3. Remove the chicken from the skillet. Keep warm.
  4. Add the pancetta to the skillet, then cook and stir 2 minutes or until crisp. Remove from the skillet.
  5. Stir the bell peppers, shallots, lemon zest, garlic powder and rosemary into the skillet. Cook and stir 5 minutes, or until vegetables are tender.
  6. Stir in the white wine. Reduce heat to low, then simmer 2 minutes or until reduced by half.
  7. In a bowl, mix the stock and flour until well blended.
  8. Add the stock mixture to the skillet. Bring to a boil.
  9. Return chicken to the skillet. Simmer, covered, 8 minutes or until chicken is cooked through and sauce is slightly thickened.
  10. Crumble the pancetta, and sprinkle it and the olives over the chicken.
