  • 1 Tablespoon all-purpose flour
  • 1 teaspoon salt
  • 1 1/2 teaspoons rubbed sage
  • 1 teaspoon minced garlic
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon ground allspice
  • 1/2 teaspoon paprika
  • 4 boneless pork chops, about 1 inch thick
  • 2 Tablespoons olive oil
  • 2 red apples, thinly sliced
  • 1 cup thinly sliced red onion
  • 1 Tablespoon brown sugar
  • 1/2 cup apple juice


  1. Mix the flour, salt, sage, garlic, thyme, allspice and paprika in a small bowl.
  2. Sprinkle both sides of the pork chops with about half of the seasoned flour mixture.
  3. Heat the oil in large skillet on medium-high heat. Add the pork chops, then brown on both sides.
  4. Remove pork chops from the skillet.
  5. Add the apples, onion, remaining flour mixture, brown sugar and apple juice to the skillet. Stir until well mixed.
  6. Return pork chops to the skillet. Bring to a boil.
  7. Reduce heat to low.
  8. Cover, and simmer 5 minutes, or until at desired doneness.
  9. Transfer pork chops to a serving platter.
  10. Simmer the sauce 5 more minutes, or until slightly thickened.
  11. Serve sauce over the pork chops.
