A classic ingredient in French cooking, tarragon is known for its cool, bittersweet minty flavor and anise-like aroma. This recipe pairs tarragon nicely with the sweet bite of the shallots.
Amount Per Serving
1small whole chicken (3-5 lb)
1Tablespoondried tarragon leaves
1/2teaspoonground black pepper
2cupscherry or grape tomatoes, halved
Preheat the oven to 375 °F.
Place the chicken, breast-side up, on a rack in a shallow roasting pan.
Mix the oil, tarragon, garlic, pepper and salt in a medium bowl.
Add the tomatoes and shallots, then toss to coat.
Remove the tomatoes and shallots, and set aside.
Brush the chicken with the oil mixture.
Roast 1 to 1¼ hours, or until chicken is cooked through. During the last 25 minutes of roasting, arrange the shallots around the chicken in pan. During the last 10 minutes of roasting, arrange the tomatoes around the chicken in pan.
Remove the tomatoes, shallots and chicken from the roasting pan.
Cover the chicken, and let stand 10 minutes before carving.
Serve the chicken with shallots and tomatoes.
