  • 13 ounces canned light tuna in water, drained and flaked
  • 2 eggs, beaten
  • 1/2 cup carrot, finely grated
  • 1/4 cup Italian breadcrumbs
  • 2 Tablespoons chopped green onion (scallion)
  • 2 Tablespoons chopped fresh Italian (flat-leaf) parsley
  • 1 pinch ground red (cayenne) pepper, to taste
  • 4 teaspoons olive oil
  • 4 whole-wheat hamburger rolls (optional)
  • 4 leaves green lettuce (optional)
  • 2 Tablespoons mayonnaise (optional)
  • 4 slices tomato (optional)
  • 4 slices sliced Cheddar cheese (optional)


  1. In a mixing bowl, combine tuna, egg, carrot, breadcrumbs, onion, parsley and cayenne; shape mixture into patties.
  2. Heat olive oil over medium heat.
  3. Sauté tuna patties for four to five minutes on each side; turn carefully as they easily fall apart. Add cheese if desired.
  4. Serve on hamburger buns (really nice if toasted) with lettuce, tomato, and mayonaisse.
