  • 2 1/2 pounds boneless sirloin steak, cut into 1+ inch cubes
  • 4 Tablespoons olive oil
  • 2 Tablespoons balsamic vinegar
  • 2 teaspoons minced garlic
  • 1 Tablespoon dried basil
  • 1/8 teaspoon ground red (cayenne) pepper
  • 1 Tablespoon dried oregano
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper, to taste
  • 3 cups zucchini, cut into 1 inch slices
  • 3 cups white button mushrooms, rinsed
  • 2 cups red bell pepper, cut into 1-2 inch pieces
  • 2 cups red onion, cut into 1-2 inch pieces (optional)


  1. To make marinade, whisk together olive oil, vinegar, garlic, basil, cayenne, oregano, salt, and pepper.
  2. Add the steak and mix until well coated.
  3. Marinate 30 minutes or more in the refrigerator, or overnight.
  4. Place meat and vegetables on skewers, and grill over medium-high heat for 7 to 10 minutes, turning often.


If you're using bamboo skewers, soak them in water 30 minutes before using.
