  • 1 Tablespoon butter
  • 1/2 medium leek
  • 1 dash salt
  • 1 dash ground black pepper
  • 4 eggs
  • 1/2 cup half-and-half
  • 1 dash ground nutmeg
  • 3/4 cup Gruyere cheese, grated
  • 1/2 bunch asparagus, tough ends removed, thinly sliced on the diagonal
  • 1 pie crust


  1. Preheat oven to 350 ┬║F, with rack in lowest position.
  2. In a large skillet, melt butter over medium. Add leek and asparagus; season with salt and pepper. Cook, stirring occasionally, until asparagus is crisp-tender, 6 to 8 minutes; let cool.
  3. In a large bowl, whisk together eggs, half-and-half, salt, pepper, and a pinch of nutmeg.
  4. Place tin with pie crust on a rimmed baking sheet.
  5. Sprinkle the crust with the shredded cheese.
  6. Top the cheese with the asparagus and pour the egg mixture on top.
  7. Bake until center of quiche is just set, 50 to 60 minutes, rotating sheet halfway through. Let stand 15 minutes before serving.
