  • 2 sprays cooking spray
  • 1 pound zucchini, sliced into 1/4 inch rounds
  • 1 Tablespoon olive oil
  • 1/4 cup shredded Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1/8 teaspoon salt, to taste
  • 1/8 dash ground black pepper, to taste


  1. Preheat oven to 450 ┬░F. Coat baking sheet with cooking spray.
  2. Place the breadcrumbs, cheese, salt and pepper in a bowl, stirring with a whisk.
  3. Put zucchini slices in a separate bowl, and stir with oil to coat.
  4. Dredge each slice in breadcrumb mixture to coat both sides, pressing the coating on to stick.
  5. Place slices in a single layer on prepared baking sheet.
  6. Bake for 25-30 minutes or until browned and crisp.
  7. Serve immediately.
