Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup unsweetened applesauce
  • 1/2 cup egg white
  • 2 Tablespoons vegetable or canola oil
  • 2 sprays cooking spray

Preparation

  1. Preheat oven to 400 ┬░F.
  2. Lightly spray an 8-inch square pan with vegetable oil cooking spray.
  3. Mix the cornmeal, flour, sugar, baking powder and salt in a medium-size mixing bowl.
  4. Add the buttermilk, applesauce, egg whites and vegetable oil, and mix well by hand.
  5. Pour the batter into the sprayed pan and shake to make it level.
  6. Bake until a toothpick inserted in the center comes out clean, about 25 minutes.
  7. Allow to cool, then cut into squares.
