  • 2 Tablespoons olive oil
  • 1 1/2 pounds boneless skinless chicken breast, cut into 1-inch cubes
  • 1 yellow onion, cut into 1/2-inch-thick wedges
  • 1/2 teaspoon fennel seed
  • 2 cups canned white beans (cannellini), drained and rinsed
  • 2 cups canned diced tomatoes
  • 1/4 cup red wine
  • 1 teaspoon dried basil
  • 1 teaspoon minced garlic
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground black pepper, coarse ground
  • 1 teaspoon salt
  • 6 ounces fresh spinach


  1. Heat the oil in large skillet on medium-high heat. Add the chicken, then cook and stir 10 minutes, or until browned.
  2. Remove the chicken from the skillet.
  3. Add the onion and fennel seed. Cook and stir on medium heat 5 minutes or until tender.
  4. Stir in the beans, tomatoes, red wine, basil, garlic, rosemary, oregano, black pepper and salt. Bring to a boil, stirring frequently.
  5. Reduce heat to low. Cover, and simmer 3 minutes.
  6. Return chicken to the skillet.
  7. Stir in the spinach. Cover.
  8. Cook 5 minutes longer, or until spinach is wilted.
