  • 4 cups cooked brown rice
  • 1 cup cherry or grape tomatoes, halved
  • 1 cup asparagus, blanched, cut into 1-inch pieces
  • 3/4 cup reduced-fat mayonnaise
  • 1 Tablespoon honey mustard
  • 1 lemon, zest, and juice
  • 1 teaspoon chopped fresh parsley


  1. Combine cooked rice, tomatoes and asparagus in medium bowl.
  2. Mix mayo, honey mustard, parsley, lemon juice and zest until well blended.
  3. Add to rice mixture; toss to coat.
