  • 2 Tablespoons butter
  • 1 cup chopped onion
  • 4 cups reduced-sodium chicken broth or stock
  • 1 1/2 cups canned diced tomatoes
  • 1 teaspoon fresh thyme
  • 1 1/2 cups frozen mixed vegetables
  • 2 cups cooked white meat turkey, sliced into strips
  • 1 cup cooked brown rice
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper


  1. Melt butter in a pot over medium heat and cook onion, stirring occasionally, 5 minutes or until softened.
  2. Stir in broth, tomatoes, thyme, and mixed vegetables; bring to a boil over high heat.
  3. Reduce heat to low and add turkey. Simmer 5 minutes or until heated through.
  4. Stir in cooked brown rice.
  5. Season with salt and black pepper.
