Turkey Tinga Tortilla Cups

  • 4 8-inch whole-wheat tortillas
  • 2 cups cooked white meat turkey, shredded
  • 3/4 cup salsa
  • 2 cups green lettuce, shredded
  • 1 cup tomato, chopped
  • 1/2 cup shredded Oaxaca cheese
  • 4 sprays cooking spray


  1. Preheat the oven to 425 ┬░F.
  2. Loosely crumple sheets of aluminum foil to make 3-inch-diameter ball; place on a baking sheet.
  3. Drape a tortilla over each foil ball; spray with cooking spray. Bake 6 to 8 minutes or until tortillas are golden brown.
  4. Meanwhile, combine the turkey and salsa in a microwavable bowl; cover with waxed paper. Microwave on high for 2 minutes or until heated through.
  5. Fill the tortilla cup with the turkey mixture; top with the lettuce, tomato and cheese.
