  • 8 ounces flat rice noodles
  • 2 Tablespoons rice vinegar
  • 3 Tablespoons soy sauce or tamari
  • 1 Tablespoon sesame oil
  • 3 Tablespoons vegetable or canola oil
  • 2 cups cooked white meat turkey, shredded
  • 4 green onions (scallions), white part only, sliced
  • 1 cup sugar snap peas, sliced diagonally
  • 2 teaspoons sesame seeds
  • 1/2 cup chopped fresh cilantro
  • 8 cups Bagged salad with lettuce and vegetables


  1. Cook the noodles according to directions; drain.
  2. Whisk the vinegar, soy sauce, sesame and vegetable oils in a small bowl.
  3. Combine the turkey, green onions, sugar snap peas, sesame seeds, and cilantro in a salad bowl.
  4. Toss cooked noodles with half of the salad dressing.
  5. Arrange noodles mixture on top of salad and drizzle remaining vinaigrette on top.
