Ingredients

  • 4 bone-in chicken breasts
  • 2 Tablespoons butter
  • 1 jalapeno pepper, to taste, seeded and minced
  • 1/4 cup chopped fresh cilantro
  • 2 teaspoons minced garlic
  • 1/2 teaspoon salt, to taste
  • 1/2 teaspoon ground black pepper, to taste
  • 4 Tablespoons lime (optional)

Preparation

  1. Preheat the oven to 450 F°. Line a broiler or baking pan with foil for easy clean-up. Place a wire rack on top of the pan.
  2. Using your hands or a food processor, combined the butter, jalapeno, cilantro, garlic, salt, and pepper.
  3. Season the chicken all over with salt and pepper.
  4. Carefully pull the skin away from the chicken breasts and stuff the jalapeno cilantro butter inside, dividing it evenly between each breast to be prepared.
  5. Bake for 30-35 minutes or until juice run clear (internal temp of 160 °F) If needed broil for 2 minutes after to crisp up the skin. Let rest for 5 minutes.
  6. Drizzle with lime juice right before serving, if desired.
