Ingredients

  • 2 Tablespoons butter
  • 1 cup sweet onion (Vidalia), chopped
  • 4 cups reduced-sodium chicken broth or stock
  • 2 cups canned low-sodium diced tomatoes
  • 1 teaspoon fresh thyme
  • 2 cups frozen mixed vegetables
  • 2 cups cooked boneless skinless chicken breast, sliced into thin strips
  • 2 cups instant brown rice
  • 1 dash salt
  • 1 dash ground black pepper

Preparation

  1. Melt butter in a large saucepot over medium heat and cook onion, stirring occasionally, 5 minutes or until softened.
  2. Stir in broth, tomatoes, thyme and mixed vegetables; bring to a boil over high heat.
  3. Reduce heat to low and add chicken and rice. Simmer 5 minutes or until heated through.
  4. Season with salt and black pepper.
