  • 1 1/4 pounds medium red potato
  • 1/2 cup plain nonfat yogurt
  • 1/2 cup lowfat milk
  • 2 Tablespoons butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper


  1. Place the whole potatoes (do not poke) in a lidded microwave-safe dish; cover.
  2. Microwave on high for 10 to 15 minutes or until the potatoes are tender when poked with a fork.
  3. Use oven mitts to remove the dish from the microwave, and carefully remove the cover.
  4. Mash the potatoes in the dish with a potato masher or a large fork.
  5. Add the yogurt, milk, butter, salt and pepper, to taste; mix well.
  6. Microwave for 1 to 2 minutes more to heat through, if necessary.
