Ingredients

  • 1 pound Roma or plum tomato, diced, drained
  • 1 1/2 cups seedless watermelon, diced
  • 1 cup green bell pepper, cut into 1/3-inch cubes
  • 1 cup cucumber, cut into 1/3-inch cubes
  • 1/2 cup radish, thinly sliced
  • 2 Tablespoons olive oil, for the salad
  • 2 1/2 cups reduced-fat crumbled feta cheese, divided
  • 1/4 cup green onion (scallion), chopped, divided
  • 1/4 cup fresh mint, thinly sliced, divided
  • 1 Tablespoon olive oil, for the dressing
  • 1/2 cup low-fat plain Greek yogurt
  • 1 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

Preparation

  1. Toss the bell pepper, watermelon, cucumber, tomatoes, radishes, and oil for the salad together in a large bowl.
  2. Add half of each of the cheese, green onions, and mint.
  3. For the dressing, mix remaining cheese, green onions, mint, and oil for the dressing in a food processor.
  4. Add the yogurt and oregano.
  5. Process just to blend (do not overmix or dressing will get thin).
  6. Season dressing with salt and pepper.
  7. Mix into the salad.
