  • 2 cups water
  • 1 cup bulgur
  • 20 ounces canned pineapple chunks, drained
  • 1/2 cup chopped pecans
  • 2 Tablespoons chopped fresh basil
  • 2 Tablespoons chopped fresh Italian (flat-leaf) parsley
  • 1 1/2 teaspoons olive oil


  1. Combine the water and bulgur in a large saucepan.
  2. Heat to boiling; reduce heat and simmer, covered 35 to 40 minutes or until bulgur is tender but not mushy.
  3. Transfer to a large bowl; cool to room temperature.
  4. Stir the pineapple, pecans, basil, parsley and oil into the bulgur.
  5. Serve at room temperature.
