I’m going to tell you my secret for the most amazing blueberry muffins. I love all kinds of blueberry muffins, but my favorite is a rework of this Tri-Berry Muffin recipe. Oh I love that recipe too, but when my Mom started making an all-blueberry version, our family agreed it was incredible.
We are full-on in blueberry season right now and I couldn’t be happier. It’s a bonus that blueberries are considered a “super food.” As I pop a handful of these yummy low-calorie berries (just 30 calories per half cup) in my mouth, I’m not thinking about the phytonutrients, or good-for-me vitamins and minerals like K1 and C and manganese. I don’t focus on how they are helping my heart or my brain. I just know they taste like sunshine.
If you love blueberries, then you probably love blueberry pie, cakes, pancakes, smoothies, adding them to cereal and yogurt, and even salads … oh my the list goes on and on. I’m always looking for ways to enjoy my blueberries. But as I said, my absolute favorite blueberry delight is in this fabulous muffin recipe. It’s so easy to make.
That’s the big secret, and wow does it do the trick. Most recipes call for about ½ teaspoon of cinnamon. This recipe calls for 1½ Tablespoons! The first hint you are in for a special muffin is the aroma as they bake. The whole house smells amazing, and builds your anticipation for a yummy treat.
